ANZAC Biscuit Recipe

Ingredients:

 

2 cups rolled oats
2 cups flour
2 cups coconut
1 and a 1/2 cups sugar

250g (8oz) butter
2 tablespoons golden syrup
1 teaspoon baking soda
2 tablespoons boiling water

 

Method:

 

Preheat oven at 160° celsius (325° fahrenheit) and grease oven trays.
Put rolled oats, flour, coconut and sugar into a large bowl.
Melt butter and golden syrup in a pan, stirring.
Remove pan from heat.
Mix baking soda and boiling water together in a cup.
Add these to the pan of butter.
Quickly add this mixture to the dry ingredients, and mix well.
Put spoonfuls of dough on to greased trays and press with a fork.
Bake for 20 minutes.
