Fudge Cookies
100 gm (4oz)
butter or margarine, softened
75 gm (3oz)
soft light brown sugar
175 gm (6oz)
plain flower
30 mls
(two level teaspoons) cocoa powder
- Grease
and line a flat plate or microwave baking sheet
- Cream
butter and sugar until soft and fluffy.
- Stir
in the flour and cocoa to make a smooth dough.
- Roll
the dough into balls about the size of a walnut and arrange 6 in a circle on the plate or baking
sheet. Flatten slightly and microwave on medium to high for 3½ minutes. Leave to stand for 5
minutes then cool on a wire rack. Repeat with the remaining dough.
- Ice
if required when cold.
