LOW FAT FRUIT CAKE- No eggs

INGREDIENTS:
450 grams (1 lb) flour
3 ½ teaspoons Baking Powder
100 grams (4 oz) butter
225 grams (8 oz) Brown Sugar
275 ml (½ pint) Non Fat or Soy Milk
1 kg mixed fruit, or equivelant of dried fruits (Sultanas, currants etc)
Spices: ½ teaspoon each of mixed spice, cinnamon, nutmeg, and
pinch of curry powder ( this gives a darker colour)
Essences:
Vanilla, Almond, Lemon and Orange, or juice of Lemon and Orange. 1 tablespoon Marmarlade or other jam
1 tablespoon Golden Syrup
Chopped Walnuts Optional

METHOD:
For your Christmas Cake, try adding Rum essence also.

Place all dry ingredients into bowl of mixer, and add margarine. Mix until well rubbed in.Mix liquids together, and add to flour mix, alternatively with dried fruit.
Grease 8 inch square tin well, or preferably use Baking Paper that the cake will not stick to, place mixture in tin, and bake for 2-3 hours, below centre of oven at 300 deg F or 170 deg C.

BASIC MUFFIN RECIPE

INGREDIENTS:

1¾ cups Self Raising Flour
2-3 tablespoons castor sugar
1 egg lightly beaten
¾ cup milk
4 oz butter, melted
1 teaspoon Baking Powder
Vanilla Essence

METHOD:

Sift dry ingredients into a large bowl. Into a small bowl, melt butter,
and add milk. Add liquid mixture to dry ingredients, and mix. Do Not
over beat.
¾ fill muffin tins.

Bake 400 deg F, or 220 deg C for 10 - 15 minutes, just above middle
of oven.

VARIETIES TO TRY:
*Add spices (mixed spice, cinnamon) and dried or fresh fruit chopped.
*Essences, or lemon or orange juice, and grated peel.
*Sprinkle with brown sugar, and cinnamon mixed together.
*Add dried fruits, e.g. sultanas, currants, chopped apricots.
*Add chopped fresh fruit e.g. apple, banana, apricot, peach, rhubarb.

INGREDIENTS:

1 tablespoon butter
1 cup chopped dates
1 small cup sugar
1 teaspoon Baking Soda
1 dessert spoon Golden Syrup
1 cup boiling water
2 cups flour
1 teaspoon Baking Powder

METHOD:

Pour the boiling water over the butter, dates, sugar, baking soda,
and syrup. Mix well, and stand for a short while for it to cool.
Add the flour and baking powder. Bake in a greased loaf tin
(or lined with baking paper) in a Moderate Oven ( 170 deg C)
1 - 1½ Hours.

PAVLOVA

TIP: Egg whites beat better if they are at room temperature and not fresh.

INGREDIENTS:

4 egg white
1 cup sugar
1 tablespoon boiling water
2 tablespoons cornflour
½ teaspoon vinegar
½ teaspoon vanilla

METHOD:

Beat egg whites until very stiff. Gradually add sugar and boiling water
alternatively, while continuing to beat, until sugar becomes dissolved.
Fold in cornflour and vinegar.
PREHEAT oven to 300 deg F ( 200 deg C),
then on placing in the oven
TURN TO: 250 deg F (125 deg C)
Place below centre of oven, bake for 1 hour, and turn temperature off,
leaving pavlova in the oven until cool if you can.

LOW FAT XMAS PUDDING

NOTE: 1 whole egg can be used, remembering this adds to the fat level.

INGREDIENTS:

½ cup chopped dated
½ cup chopped sultanas
½ cup mixed peel
1 cup chopped apricot
1 teaspoon allspice
½ teaspoon ground clove
½ cup unsweetened orange or pineapple juice
1 cup wholemeal self raising flour
1 egg white lightly beaten

METHOD:

Simmer for 5 minutes: fruit, juice, and spices.
Add flour and egg white.If mixture too stiff,
add a little water.Place in metal bowl,
cover with foil, place in pot with water.
Boil 1 hour.

ANZAC BISCUITS

INGREDIENTS:

2 oz flour
3 oz sugar
2/3 cup coconut
2/3 cup rolled oats
2 oz butter
1 tablespoon Golden Syrup
½ teaspoon Baking Soda
2 tablespoon Boiling Water

METHOD:

To a bowl, add flour, sugar, coconut, and rolled oats. Melt butter and
syrup. Dissolve the baking soda, in boiling water, and add to syrup mix.
Then add liquids to dry ingredients.
Bake 170 deg C for 10 - 12 minutes approximately. As oven
temperatures differ, these can over cook quickly if you don't
keep a watch on them.
Loosen with a spatula immediately, let cool a little before transfering to a
wire rack to cool completely, before storing in an airtight container.

KIWI CRISPS

INGREDIENTS:

4 oz butter
2 oz sugar
2 tablespoons sweetened condensed milk
6 oz flour
1 teaspoon Baking Powder
Chopped chocolate or chocolate chips (amount to desired taste)
Vanilla Essence

METHOD:

Cream butter and sugar together, add sweetened condensed milk, and vanilla essence. Beat until well mixed and is a thick creamy texture.
Then add dry ingredients gradually, and lastly the chocolate, mixing until evenly distrubuted through the mixture.
Place in teaspoon lots, onto a greased try. Roll each into a ball, then flatten
with a fork which has been dipped in cold water.
Bake for 8 - 10 minutes, at 350 deg F, or 175 deg C.
When taken from the oven, lift with a spatula, leave to cool a little, before
transferring to wire rack, to cool completely, before storing in an airtight
container.

TIP: You can subsitute the addition of chocolate to this recipe, with your own choice.
some examples are, chopped nuts, raisins, sultanas, dried apricot chopped..
Or by rolling and flattening a plain mixture, and placing on top, a single nut
(almond), or glazed cherry.
Or cook for about 2-3 minutes, and quicklyl make a thumb print, with a thick
handled spoon or ladel, and place a little raspberry jam in the
dent. Continue to cook for the rest of the time.

COCONUT CARAMEL SQUARE
A sweet caramally square which is very simple to make.

     
   

INGREDIENTS:

2 packets (525 gm) Krispies biscuits, crushed
180gm butter melted
1 cup coconut threads (I use ordinary coconut successfully)
320 gm finely chopped chocolate ( or an amount you think sufficient, purchased
......................................................chips can be used )
2 tins (395gm) condensed milk

METHOD:

Line a 24cm x 27 cm tin with baking paper so there is a 1cm overlap.

Blend crushed biscuits and melted butter, and press firmly into the tin.
Sprinkle coconut and chocolate over the base.
Pour on the condensed milk, so there is an even layer.

Bake for about 40 minutes at 150 deg Celcius, until evenly browned.
Keep checking to prevent burning.

Leave to cool thoroughly, and cut.

This makes a large square, and I would think it should halve successfully
using 1 packet biscuits, and 1 tin of condensed milk,
also halving the other ingredients.
